Method

  1. Butterfly and chill prawns

    Slice prawns lengthways without cutting all the way through, then keep them very cold.

    Look for: The prawns should open flat and look glossy. Tip: Use the freshest prawns possible as acid, not heat, changes the texture. Avoid: Do not use warm seafood.
  2. Blend the green marinade

    Blend lime juice, chilli, coriander and salt until bright green.

    Look for: The marinade should be vivid and sharp. Tip: Taste for salt before adding seafood. Avoid: Do not blend too early or the colour dulls.
  3. Cure briefly

    Toss prawns in the marinade for 10–15 minutes until just opaque.

    Look for: Prawns should turn opaque around the edges. Tip: Serve as soon as the texture is right. Avoid: Do not cure for hours or they become chalky.
  4. Slice garnishes

    Slice cucumber and red onion very thinly for crunch.

    Look for: Slices should be fine and even. Tip: Rinse onion briefly if it is very strong. Avoid: Thick onion overwhelms the dish.
  5. Serve cold

    Arrange with avocado, cucumber and extra lime.

    Look for: Everything should be cold, sharp and fresh. Tip: Add tostadas on the side for crunch. Avoid: Do not serve at room temperature.
