The story
Babi Guling developed within Bali, where local cooks shaped the dish around available ingredients, established methods and the occasion on which it was eaten. What makes it distinctive is whole roast pig, turmeric-rich spices and crisp skin. The technique should preserve contrast and prevent the finished dish from becoming heavy or indistinct. Babi Guling is particularly associated with temple ceremonies and communal feasts. Method
Prepare the spice paste
For Babi Guling, slice shallots, garlic, turmeric, galangal, chilli and lemongrass thinly before blending or pounding. This helps the paste break down without watering it out.
Look for: Paste should be coarse but cohesive. Tip: A mortar gives better texture but a blender is fine. Avoid: Large chunks of galangal stay woody.Season the protein
Rub the paste deeply into the chicken, pork or liver. For whole birds, loosen the skin gently and push some paste underneath.
