The story
Curry Goat is a Jamaican main with a clear sense of place. Goat curry in Jamaica reflects South Asian influence brought through indentured labour after emancipation, transformed with local curry blends, Scotch bonnet, thyme and Jamaican cooking practices. The recipe below keeps the defining ingredients and technique intact while giving practical metric quantities and enough detail for a home cook to judge texture, seasoning and doneness rather than simply follow a timer.

Toss goat with half the curry powder, allspice, spring onion, half the garlic, ginger and salt. Marinate at least 2 hours, ideally overnight.
Tip: Brown seasoned goat in curry-infused oil before braising to layer roasted spice underneath the final gravy. Avoid: Goat needs time; boiling hard tightens the meat, and adding potatoes too early makes them dissolve before the goat tenderises.Heat oil in a heavy casserole
