The story
Saganaki takes its name from the small two-handled pan used to cook and serve dishes directly at the table. Cheese saganaki became a taverna classic, with feta particularly suited to baking alongside tomatoes, peppers, herbs or a light coating. It is loved for the way heat changes firm, crumbly feta into a softer, more aromatic centre while intensifying its salty flavour. A crisp edge, honey drizzle or sharp tomato sauce creates a memorable sweet-salty or acidic contrast. Feta saganaki belongs to the sociable rhythm of Greek meze, where several hot and cold plates arrive for everyone to taste. It is usually eaten immediately, often with bread for scooping up the cheese and pan juices.
