Method

  1. Prepare the ingredients

    Cut chicken thigh and vegetables into even pieces. Dice onions finely, crush garlic and ginger, and measure spices before heating the pan.

    Look for: Everything is ready before the pan goes on. Tip: Even cutting gives a better sauce and texture. Avoid: Do not start cooking while key ingredients are still uncut.
  2. Build the base

    Warm oil in a heavy saucepan over medium heat. Cook onion for 8 to 10 minutes until soft and lightly golden, then add garlic, ginger and spices for 1 minute.

    Look for: The onion smells sweet and the spice darkens slightly. Tip: This base gives mchuzi and pilau real depth. Avoid: Do not burn garlic; add a splash of water if the pan catches.
  3. Add the main ingredient

    Add chicken thigh and stir until coated in the base. For meat, brown the edges; for beans, rice, plantain or vegetables, turn gently so they do not break.

    Look for: The main ingredient is coated and starting to take colour. Tip: Use a wooden spoon and scrape the bottom as you go. Avoid: Do not stir delicate fish or plantain too hard.
  4. Simmer or steam

    Add stock, water, tomatoes or coconut milk as the dish requires. Cover and cook gently until tender: 15 minutes for fish, 25 minutes for chicken, 45 to 75 minutes for tougher meat or beans.

    Look for: The sauce thickens and the main ingredient is tender. Tip: Top up with small splashes of water rather than flooding the pan. Avoid: Do not boil coconut milk aggressively or it may split.
  5. Finish and balance

    Taste with rice, ugali or plantain. Adjust salt, lemon, chilli or coconut richness, then rest for 5 minutes so the sauce settles.

    Look for: The sauce coats the spoon and tastes complete with the side. Tip: A final squeeze of lemon often wakes up rich coconut dishes. Avoid: Do not season only from the spoon; taste with the starch.
