The story

Madeleines are associated with Commercy in Lorraine, though several stories compete to explain their name and invention. Their literary fame grew through Marcel Proust, whose description of tasting one made the cake a symbol of involuntary memory. They are famous for their delicate shell ridges, browned edges and characteristic central hump. Browned or melted butter gives them more aroma than an ordinary small sponge. Madeleines are served with tea or coffee and occupy a space between everyday cake and refined pâtisserie. Their connection with memory and childhood is now almost as important as their regional history.

Method

  1. Prepare the base

    Weigh all ingredients before starting. Bring dairy and eggs close to room temperature, line or butter the tin, and prepare the butter, eggs and lemon zest so the texture is even.
