The story
Layered aubergine dishes exist across the eastern Mediterranean, but the modern Greek moussaka is strongly associated with early twentieth-century chef Nikolaos Tselementes. His version added a French-influenced béchamel topping to aubergine and minced meat. Moussaka became famous because it combines three distinct experiences in one slice: silky aubergine, warmly spiced meat sauce and a thick, browned custard-like topping. It is rich, structured and immediately recognisable. It is a celebratory family dish and a mainstay of Greek restaurants, usually made in a large tray and rested before serving. Its blend of local ingredients and European technique also reflects a period when Greek cooking was being codified for modern households.

Method
Slice and roast eggplants. Cook lamb with onion, garlic, tomato, and cinnamon. Make béchamel sauce. Layer eggplant, meat, sauce in a dish, top with cheese, and bake at 180°C for 45 minutes.
