The story

Paella valenciana comes from the rice-growing landscapes around Valencia, particularly the Albufera. Rural cooks prepared rice outdoors in a wide pan over wood fires, using available ingredients such as chicken, rabbit, flat green beans, garrofó beans and sometimes snails. Seafood-heavy versions are later branches of the wider paella tradition rather than the defining Valencian form. It is famous for rice that absorbs a concentrated stock while remaining separate and evenly cooked. The broad pan encourages evaporation and may create socarrat, the prized toasted layer on the bottom, while saffron, rosemary and the browned meat give the dish its characteristic aroma. Paella is a social meal traditionally cooked and eaten from a communal pan, especially at weekends and celebrations. In Valencia, ingredient choices and technique are matters of regional pride, and the word paella refers to both the dish and the pan in which it is made.
