The story

Suspiro a la Limeña emerged in nineteenth-century Lima from a rich milk-and-sugar base known as manjar blanco. Its poetic name is traditionally linked with writer José Gálvez, though the dessert itself was developed in elite urban kitchens. Suspiro a la Limena stands out because of silky dulce de leche-style custard topped with port-scented Italian meringue. Technique matters as much as the ingredient list, particularly the control of moisture, heat and final seasoning. It is a classic Lima dessert served in small portions because of its concentrated sweetness.

Method

  1. Prepare and measure

    Measure every ingredient, cut the aromatics and prepare the main ingredient before cooking starts.
