The story

Rabo de toro is strongly associated with Córdoba and Andalusian bullfighting culture, where tails from fighting bulls were historically cooked after a corrida. Similar oxtail stews exist elsewhere, but the Cordoban version became a recognised restaurant and home-cooking speciality. The dish is celebrated for the transformation of a collagen-rich cut into succulent meat and a glossy, deeply flavoured sauce. Long braising extracts gelatine from the joints, while wine, aromatics and vegetables reduce around the meat. It remains part of Cordoban culinary identity and appears in traditional taverns, especially during festival periods. Modern versions usually use ordinary beef oxtail, preserving the technique without depending on bullring supply.

    Sear oxtail, sauté vegetables, then combine. Add wine and stock, simmer 3–4 hours until tender. Serve with potatoes or crusty bread.
