Method

  1. Prepare the spice paste

    For Sambal Goreng Ati, slice shallots, garlic, turmeric, galangal, chilli and lemongrass thinly before blending or pounding. This helps the paste break down without watering it out.

    Look for: Paste should be coarse but cohesive. Tip: A mortar gives better texture but a blender is fine. Avoid: Large chunks of galangal stay woody.
  2. Season the protein

    Rub the paste deeply into the chicken, pork or liver. For whole birds, loosen the skin gently and push some paste underneath.

    Look for: Every surface should be stained with spice. Tip: Resting for 30 minutes improves flavour. Avoid: Do not season only the outside.
  3. Cook slowly first

    Cook Sambal Goreng Ati gently in coconut milk, stock, banana leaf or covered heat until the protein is tender before any final grilling or frying.

    Look for: Meat should be cooked through and aromatic. Tip: Slow cooking carries the bumbu into the meat. Avoid: High heat too early burns the paste.
  4. Finish with colour

    Grill, roast, fry or reduce the sauce to finish Sambal Goreng Ati. Brush with oil or kecap only near the end so it caramelises rather than burns.

    Look for: Look for browned edges and a glossy coating. Tip: Turn often for even heat. Avoid: Do not walk away during the final colour stage.
  5. Rest and serve

    Rest meat for 10 minutes, then serve with rice, sambal, cucumber and lime. Spoon any reduced spice paste over the top.

    Look for: Juices should settle before cutting. Tip: Leftovers are excellent shredded into rice. Avoid: Cutting immediately makes meat dry.
