Method

  1. Cut and marinate

    Cut chicken thigh into even 2.5 cm pieces so they stay juicy on skewers. Mix with kecap manis, lime, garlic, coriander and salt, then marinate for at least 30 minutes.

    Look for: Chicken pieces should be glossy and evenly coated. Tip: Thigh meat is more forgiving than breast. Avoid: Do not use large chunks; the outside burns before the centre cooks.
  2. Soak and thread skewers

    Soak bamboo skewers for 20 minutes. Thread 4-5 pieces per skewer, leaving tiny gaps so heat reaches the sides.

    Look for: Skewers should look full but not compressed. Tip: Wipe excess marinade to reduce flare-ups. Avoid: Packed meat steams instead of grilling.
  3. Prepare the peanut sauce

    Simmer ground peanuts, kecap manis, garlic, chilli, lime and warm water for 5-7 minutes until glossy and pourable.

    Look for: Sauce should loosen when stirred. Tip: Add water gradually. Avoid: Do not reduce it into a paste.
  4. Grill over high heat

    Grill or barbecue over high heat for 2-3 minutes per side, brushing lightly with kecap manis and oil near the end.

    Look for: Edges should char while the centre stays juicy. Tip: Turn often for even colour. Avoid: Sugary kecap burns if brushed too early.
  5. Serve Madura style

    Serve with peanut sauce, sliced shallot, chilli, lime and rice cakes or rice.

    Look for: Chicken should read 74°C in the thickest piece. Tip: A final squeeze of lime sharpens the sweetness. Avoid: Do not leave cooked skewers sitting uncovered.
