The story

Kottu developed as an urban night-time dish made by chopping godamba roti on a hot griddle with vegetables, egg, curry and meat. The dish is recognised for kottu roti. Its success depends on preserving the intended contrast of texture, seasoning and temperature, so the defining ingredient remains clear rather than being buried by garnish or sauce. The rhythmic clatter of metal blades is part of Sri Lankan street sound, and kottu is closely associated with late-night eating.

Method

  1. Prepare and measure

    Measure every ingredient, cut the aromatics and prepare the main ingredient before cooking starts.

    Look for: Everything is ready in bowls and the main ingredient is cut evenly. Tip: Good mise en place prevents bland, rushed cooking. Avoid: Do not begin cooking before the sauce, liquid or spice base is measured.
  2. Build the flavour base

    Cook the onion, garlic, ginger, herbs, spices or paste in the measured fat until fragrant and properly softened.

  3. Cook the main element
