The story

Stifado is thought to have developed through Venetian influence, its name related to stufato, while Greek cooks adapted the method with local wine, vinegar, cinnamon and abundant small onions. Rabbit and beef are among the best-known versions. Its defining feature is the quantity of whole onions, which soften and sweeten without disappearing completely. Wine, tomato and spices form a glossy sauce around tender meat. Stifado is associated with cool-weather family meals and traditional tavernas. It is usually served with bread, potatoes, rice or pasta so none of the richly seasoned sauce is wasted.

Method

  1. Cut and season correctly

    Prepare the beef and baby onions. Slice meat across the grain where relevant, cut vegetables into even pieces, and season 15 minutes before cooking so the flavour reaches the centre.

    Look for: Pieces are even and lightly seasoned all over. Tip: Keep seafood chilled until the pan or pot is ready. Avoid: Uneven cutting makes some pieces dry before others are cooked.
  2. Build the flavour base

    Warm the fat over medium heat. Cook onions or shallots for 8–12 minutes until sweet and translucent, then add garlic, herbs or spices for the final minute.

    Look for: The base smells aromatic and looks glossy, not burnt. Tip: Lower the heat before adding paprika, saffron or delicate herbs. Avoid: Burnt garlic makes the whole dish harsh.
  3. Cook the main ingredient

    Cook the main ingredient using the traditional method for Stifado: cinnamon-scented red wine stew. Brown in batches if needed, or simmer gently so the texture stays tender.

    Look for: The surface is browned, the sauce is forming, or the protein is just opaque as appropriate. Tip: Use a wide pan for rice, seafood and flatbreads; use a heavy pot for stews. Avoid: Crowding the pan causes steaming instead of browning.
  4. Finish to the right texture

    Continue cooking until the sauce clings, the broth tastes seasoned, or the bake is golden. Use 180°C / 356°F when oven finishing is required.

    Look for: The final texture matches the dish: crisp, tender, glossy, creamy or brothy. Tip: Rest braises for 10 minutes before serving. Avoid: Do not reduce delicate seafood sauces until they turn salty.
  5. Serve with context

    Serve Stifado with its traditional accompaniment. Add herbs, lemon, sauce, bread, potatoes, rice or salad only where it strengthens the Greek identity.
