The story

Styria’s hull-less pumpkin varieties made pumpkin seeds and Kürbiskernöl defining regional products. Blending them into a bread spread extends the Heuriger tradition of cold, shareable Aufstriche. The spread is distinctive for its deep green colour, toasted-nut flavour and slight bitterness. Fresh cheese and lemon keep it light enough for bread. It is served at wine taverns, farm shops and regional buffets, often with rye bread and radishes. The dish functions as an edible marker of Styria.

Method

  1. Set up and weigh everything

    Read the full method before heating anything. Weigh every ingredient for Styrian Pumpkin Seed Spread. Put raw meat or seafood on a separate board. Peel onions and cut them into uniform 5 mm dice; mince garlic to roughly 2 mm; cut firm vegetables into equal 2 cm pieces so they cook at the same rate. Pat meat, fish or wet vegetables dry with kitchen paper before seasoning.

  4. Cook through without drying out

    Continue cooking Styrian Pumpkin Seed Spread over controlled heat, turning or stirring as required. For shallow-fried items maintain 175–180°C and cook 3–5 minutes per side. For oven finishing use 200°C conventional / 180°C fan until the centre is cooked and the outside is crisp.

    Look for: The centre is cooked and tender while the exterior remains browned or crisp. Tip: Rest thick pieces for 5 minutes after cooking so juices redistribute. Avoid: Excessively high heat burns the outside before the centre cooks.

    Look for: A spoon drawn through the sauce leaves a clear trail for 1–2 seconds. Tip: If the sauce is too salty, dilute with unsalted liquid rather than masking it with sugar. Avoid: Do not reduce before the main ingredient is tender; it can leave too little liquid to finish cooking.
  6. Rest, garnish and serve safely

    Rest Styrian Pumpkin Seed Spread for 5 minutes where appropriate. Warm plates or bowls, portion evenly, then add the specified fresh herbs, zest, crisp garnish or sauce. Serve hot food above 63°C. Refrigerate leftovers within 2 hours in shallow containers and use within 2–3 days.
