  • 24 piece corn huskssoaked until pliable

Method

  1. Prepare wrappers and filling

    Soak corn husks, banana leaves or wrapping leaves until pliable. Cut meat or chillies evenly so the filling cooks at the same pace.

    Look for: Wrappers should bend without cracking. Tip: Wipe banana leaves and pass them briefly over heat to soften. Avoid: Do not use dry husks or they tear.
  2. Make the sauce or masa

    Blend the chilli sauce or beat the masa until light and well seasoned.

    Look for: Masa should spread easily; sauce should be smooth and deep coloured. Tip: For tamales, a small piece of masa should float in water when beaten enough. Avoid: Under-seasoned masa tastes bland after steaming.
  3. Fill and wrap

    Add filling down the centre, leaving space for expansion, then fold firmly without squeezing.

    Look for: Parcels should be secure but not compressed. Tip: Keep a consistent size so they cook evenly. Avoid: Overfilling makes them burst.
  4. Steam or slow-cook

    Steam tamales at 95–100°C / 203–212°F, or slow-cook wrapped meat at 150°C / 302°F until tender.

    Look for: Tamales pull cleanly from the husk; meat should shred easily. Tip: Rest wrapped food before opening so juices settle. Avoid: Do not let the steamer boil dry.
  5. Serve traditionally

    Serve with salsa, pickled onion, tortillas or broth depending on the dish.

    Look for: The filling should be moist, not watery. Tip: Keep extra sauce warm for spooning over. Avoid: Do not unwrap everything at once if serving later.
