The story

Escabeche arrived through Spanish and Mediterranean traditions of preserving food with vinegar and spices. In Argentina, aubergines became a particularly popular version, reinforced by Italian immigration and the culture of antipasti, picadas and home-made preserves. The dish is loved for the way aubergine changes from spongy to silky while taking on sharp vinegar, garlic and herbs. Resting is crucial: the flavours become rounder and more integrated after a day or two. Berenjenas en escabeche are served with bread, cheese, cured meats and grilled food. Jars often appear at family gatherings and as part of a picada, making the dish both a preserve and a ready-made appetiser.

Method

  1. Slice and salt aubergines

    Slice aubergines into 1 cm rounds or batons, salt lightly and rest for 20 minutes, then pat dry.

    Look for: Aubergine should look drier on the surface. Tip: Even slices absorb marinade evenly. Avoid: Skipping the drying step can make the escabeche watery.
  2. Cook until tender

    Simmer or shallow-fry the aubergine until tender but still intact.

    Look for: Pieces should be silky but not falling apart. Tip: Cook in batches so slices do not crowd. Avoid: Overcooked aubergine turns mushy in the jar.
  3. Make the escabeche

    Warm vinegar, oil, garlic, bay leaf, oregano, peppercorns and chilli if using until aromatic.

    Look for: The marinade should smell sharp, herbal and garlicky. Tip: Balance vinegar with enough oil so it tastes bright but not harsh. Avoid: Do not boil hard after adding oil.
  4. Layer and chill

    Layer aubergine with marinade in a clean container, making sure the pieces are covered.

    Look for: Aubergine should be coated and glossy. Tip: Chill overnight for the most traditional flavour. Avoid: Leaving pieces exposed shortens keeping time.
  5. Serve as a picada

    Serve cold or room temperature with bread, olives, cheese or grilled meat.

    Look for: Flavour should be tangy and rounded. Tip: Bring out 20 minutes before eating. Avoid: Do not serve fridge-cold if you want the oil to taste silky.
