Boeuf bourguignon grew from Burgundy's tradition of braising tougher cuts of beef in local wine. Once a practical farmhouse preparation, it was codified in French cookery and became internationally known through restaurant cooking and writers such as Auguste Escoffier and Julia Child. Its fame comes from the transformation achieved by slow cooking: firm beef becomes tender while wine, stock, bacon and aromatics reduce into a dark, glossy sauce. Pearl onions and mushrooms add sweetness and earthiness without disappearing into the braise.
