The story

Bolo de rolo is a speciality of Pernambuco, developed from Portuguese rolled cakes but transformed with guava paste and an unusually large number of very thin layers. Its fame rests on technical precision: each sheet must be wafer-thin, spread quickly and rolled into a compact spiral before cooling. It is recognised as cultural heritage of Pernambuco and served at celebrations, official occasions and as a prestigious regional gift.
