The story
Regional bratwursts have been made in German-speaking lands for centuries, with cities such as Nuremberg and Thuringian towns developing protected styles. Sauerkraut preserved the cabbage harvest and became a natural winter accompaniment. The combination works through contrast: rich, seasoned sausage meets acidic cabbage softened with onion, apple or wine. Browning the sausage creates the essential roasted flavour. Grill or fry the sausages until browned and cooked through. Sauté onion and add sauerkraut, bay leaf, juniper, and seasoning. Simmer for 15–20 minutes. Serve sausages over warm sauerkraut with mustard on the side.
