The story
Obatzda developed in Bavarian beer gardens as a way to make full use of very ripe soft cheese. Mixing it with butter and seasoning transformed surplus cheese into a fresh, spreadable accompaniment to pretzels. It is famous for its pungent creaminess, orange paprika colour and raw-onion bite. The texture should remain rustic rather than completely smooth. Obatzda is inseparable from Bavarian beer-garden culture and is served with Brezn, radishes and beer. It is a social snack designed for sharing outdoors.
