The story

Clafoutis comes from Limousin in central France. The traditional version uses black cherries, historically baked with their stones because they were believed to add flavour, though modern home recipes often pit them for easier eating. It is famous for sitting between a custard, pancake and cake. The cherries release tart juice into a softly set batter, creating a dessert that feels rustic, light and intensely seasonal. Clafoutis is home cooking rather than elaborate pâtisserie and is commonly made when cherries are abundant. Variations using other fruit are technically called flognarde, although the clafoutis name is widely used.

Method

  1. Prepare the base

Weigh all ingredients before starting. Bring dairy and eggs close to room temperature, line or butter the tin, and prepare the black cherries and egg batter so the texture is even.

Look for: Ingredients are measured, the tin is ready and no lumps remain in dry ingredients. Tip: Use a digital scale and scrape the bowl often. Avoid: Do not guess the sugar or liquid; dessert texture depends on the ratios.
  2. Mix gently

Mix the batter, custard or dough only until smooth. For Cherry Clafoutis, keep the traditional aroma clear rather than overloading it with extra flavours.

Look for: The mixture looks glossy and even. Tip: Fold rather than beat once flour is added. Avoid: Overmixing develops toughness in cakes and pastries.
  3. Bake or cook slowly

Cook according to the traditional style: bake at 180°C / 356°F, poach gently, or simmer on low heat as the dish requires.

Look for: The centre is just set, golden, syrupy or softly creamy depending on the dessert. Tip: Rotate trays halfway through baking. Avoid: High heat can split custards, burn syrup or dry pastry.
  4. Rest and finish

Rest Cherry Clafoutis for at least 15 minutes before cutting or serving. Add syrup, glaze, cinnamon, sugar or sauce while the texture is still receptive.

Look for: The dessert cuts cleanly or absorbs syrup without collapsing. Tip: For syrup desserts, one element should be hot and the other cooler. Avoid: Serving too early can make the dessert seem greasy or loose.
  5. Serve traditionally

Plate simply with the accompaniment that belongs to French cooking, keeping the focus on the main flavour and story of the dish.

Look for: The portion looks generous, neat and recognisable. Tip: Mention the regional origin on the page caption. Avoid: Avoid decorative extras that make the dessert look generic.
