The story
Potato dumplings became important after potatoes spread through Central Europe, offering a dense, filling alternative to bread dumplings. Pairing them with smoked pork reflects preservation traditions that kept meat available through winter. The dumplings should be tender and cohesive without becoming gummy. Their mild potato flavour is ideal for salty smoked meat, fried onions and acidic sauerkraut. This is robust home and pub food, particularly suited to cold weather.
