The story

Dadinho de tapioca was created by chef Rodrigo Oliveira in São Paulo in the 2000s, drawing on north-eastern tapioca and queijo coalho. It quickly moved from restaurant innovation to popular bar snack. The cubes are crisp outside and pleasantly chewy inside, with salty cheese balancing the neutral tapioca.
