The story
Escudella i carn d'olla is one of Catalonia's oldest recorded dishes and grew from medieval pot-cooking traditions. A large mixture of meats, bones, chickpeas and vegetables produces both a broth-based first course and a platter of boiled meats and vegetables. It is famous for its scale and sequence. The broth is often served with galets pasta and a large meatball called pilota, followed by the carn d'olla of meats, chickpeas and vegetables. One pot therefore creates a complete ceremonial meal. It is strongly associated with Christmas Day in Catalonia, although simpler escudella is eaten through winter. The dish gathers family around a long meal and preserves a medieval preference for abundant, layered pot dishes.

Method
Cut and season correctly
Prepare the broth, pasta, chickpeas and mixed meats. Slice meat across the grain where relevant, cut vegetables into even pieces, and season 15 minutes before cooking so the flavour reaches the centre.
