The story

Feijão tropeiro developed with muleteers who travelled through Minas Gerais and neighbouring regions carrying durable beans, cassava flour and salted meat. The dry mixture was practical on the road. The dish is crumbly rather than soupy, combining creamy beans with crisp pork, toasted flour and soft egg. Greens and herbs relieve the richness. It remains a defining Minas Gerais dish and a common accompaniment at churrascos, football stadiums and large family meals.

Method
