The story
The history of Nigiri Sushi is closely tied to Edo, now Tokyo, in the nineteenth century. The recipe developed as a recognisable local preparation rather than a generic example of Japanese cooking. Its individual character comes from seasoned rice and carefully cut seafood. Good versions are balanced, accurately seasoned and cooked so the grain or noodle keeps its proper texture. Nigiri Sushi is particularly associated with sushi counters and celebratory meals. That setting is central to understanding the dish: it explains when it is eaten, what accompanies it and why it continues to matter within Japanese food culture.

Method
Season the rice
Cook Japanese short-grain rice, then fold through sushi vinegar while fanning until glossy and warm.
Look for: Rice is shiny and each grain holds shape. Tip: Use a cutting motion with the paddle rather than stirring hard. Avoid: Crushing the rice makes it pasty.Slice the fish
Slice fish across the grain into neat pieces about 6–8 cm long, using one smooth pull of a sharp knife.
Look for: Slices are smooth and even. Tip: Keep fish chilled until the moment you shape the nigiri. Avoid: Sawing with a blunt knife tears the fish.Shape gently
Wet your hands lightly, take a small rice portion and press just enough to hold its shape.
Look for: Rice holds together but is not dense. Tip: A small smear of wasabi between fish and rice is traditional. Avoid: Over-compressing rice is the most common beginner mistake.Finish neatly
Lay the fish over the rice and shape with two fingers so the fish hugs the rice.
Look for: Nigiri looks curved and compact. Tip: Serve in small batches while the rice is still slightly warm. Avoid: Do not overload each piece with rice.Serve with restraint
Serve with soy, wasabi and pickled ginger on the side.
Look for: The plate is clean and uncluttered. Tip: Dip fish-side down to keep the rice intact. Avoid: Do not soak the rice side in soy.
