The story

Salade Niçoise comes from Nice and the surrounding Côte d'Azur. Traditionalists emphasise raw local vegetables, tomatoes, olives and anchovies or tuna, while later restaurant versions introduced cooked potatoes, green beans and other additions. It is famous for combining salt, acidity, ripeness and colour in a single composed plate. The best examples taste of the Mediterranean rather than becoming a heavy mixed salad hidden beneath dressing. The salad is a powerful marker of Niçois identity, and debates over acceptable ingredients show how closely food and regional pride are connected. It is served as a substantial summer lunch and on café terraces across France.

Method

  1. Prepare the produce

Wash and dry the vegetables and herbs thoroughly. Slice firm vegetables into even wedges or batons so Salade Niçoise keeps its rustic structure.

Look for: Everything looks fresh, dry and cleanly cut. Tip: Use a sharp knife so tomatoes and herbs do not bruise. Avoid: Wet leaves dilute the dressing.
  2. Build the dressing

Whisk olive oil with vinegar or lemon, salt and pepper. Add aromatics slowly so the dressing supports the tuna, eggs, olives and summer vegetables rather than overpowering it.

Look for: The dressing looks glossy and lightly emulsified. Tip: Taste on a piece of vegetable, not from the spoon. Avoid: Do not drown the salad; dress just before serving.
  3. Assemble by texture

Layer the heavier pieces first, then herbs, cheese, olives or garnish. Keep classic chunks visible so the dish tells its regional story.

Look for: The plate has height, colour and clear ingredients. Tip: Leave some negative space on the serving dish. Avoid: Do not chop everything too small.
  4. Season at the table

Finish with a final pinch of salt, pepper and herbs. Serve immediately with bread or the traditional meze/tapas accompaniment.

Look for: The salad tastes bright, savoury and balanced. Tip: Serve at cool room temperature, not fridge-cold. Avoid: Adding salt too early can draw out too much liquid.
