The story
Suprema Maryland belongs to the international hotel and restaurant cooking that Argentina adapted enthusiastically during the twentieth century. Its local form became a lavish chicken dish paired with fried banana, sweetcorn and other garnishes, quite distinct from modern food associated with the US state of Maryland. The dish is remembered for its exuberant sweet-savoury combination and generous presentation. Crisp chicken, creamy sauce, corn and caramelised banana make it unmistakably retro. It survives in traditional Buenos Aires restaurants and bodegones, where older continental dishes remain part of the menu. For many diners it carries nostalgia for formal family meals and classic hotel cooking.

Method
Slice and flatten
Slice the beef or chicken into even cutlets and pound to about 5-7 mm thick. Season both sides with salt, pepper, garlic and parsley if using.
Look for: Cutlets should be thin and even from edge to edge. Tip: Cut across the grain for beef milanesa to keep it tender. Avoid: Thick pieces cook unevenly and can burn before the centre is done.Bread carefully
Dust in flour if using, dip in beaten egg, then press into breadcrumbs so the coating sticks. Rest for 10 minutes before frying.

Shallow-fry in oil at 170-180°C until golden on both sides and cooked through.
