  • 0.5 piece garlic clove

Method

  1. Hollow the courgettes

    Halve round zapallitos or courgettes and scoop the centres, leaving a sturdy shell. Chop the removed flesh finely.

    Look for: Shells should be even and not pierced. Tip: Salt the shells lightly to season from inside. Avoid: Scooping too thin makes them collapse.
  2. Cook the filling

    Sauté onion, garlic and chopped courgette flesh until moisture evaporates, then mix with beef, rice, cheese or breadcrumbs as used.

    Look for: Filling should be savoury and not watery. Tip: Cook the vegetable flesh well before mixing. Avoid: Wet filling makes the baked shells soggy.
  3. Fill and top

    Spoon filling into shells and top with cheese or breadcrumbs.

    Look for: Filling should mound neatly without overflowing. Tip: A light breadcrumb top gives a traditional golden finish. Avoid: Overpacking prevents heat reaching the middle.
  4. Bake until tender

    Bake at 180°C for 30-40 minutes until the shells are tender and the top is golden.

    Look for: A knife should enter the shell easily. Tip: Add a splash of stock or tomato to the dish if the base looks dry. Avoid: Do not bake too hot; the top burns before the shell softens.
  5. Rest and serve

    Rest 5 minutes and serve with salad or potatoes.

    Look for: The filling should hold together when lifted. Tip: They are also good warm rather than piping hot. Avoid: Serving immediately can make the filling crumble.
