The story
It reflects Cape Malay cooking, shaped in Cape Town by enslaved and exiled communities from South and Southeast Asia who combined aromatic spices with local ingredients. The dish is recognised for gentle spiced seafood curry. Its success depends on preserving the intended contrast of texture, seasoning and temperature, so the defining ingredient remains clear rather than being buried by garnish or sauce. Method
Cut evenly
Cut meat into 3 cm pieces, slice onions thinly, crush garlic and grate ginger before heating the pan.

Heat oil, fry onions for 8 minutes until golden at the edges, then add garlic, ginger and spices for 60 seconds.

Add meat and brown, then add tomatoes, potatoes and hot stock. Simmer covered for 55 to 90 minutes depending on the cut.

Remove the lid for 10 minutes if needed. Taste for salt, heat and acidity, then add coriander.

For bunny chow, hollow the loaf and spoon curry into the bread with the soft inside on top. For curry or akhni, serve with rice, sambals and chutney.
