The story

Snails have been eaten in Europe since antiquity, but escargots à la bourguignonne became closely associated with Burgundy and French restaurant dining. The familiar preparation returns cooked snails to shells with a strongly flavoured herb butter before baking. The dish is famous less for the mild snail itself than for the hot, fragrant butter surrounding it. Garlic, parsley and shallot create an instantly recognisable aroma, while the shells make the presentation theatrical. Escargots are often served for festive meals and in traditional restaurants, where eating them with special tongs and forks forms part of the experience. Bread is essential for soaking up the green garlic butter.

  1. Method

    Mix softened butter with garlic, parsley, and salt. Place a dab of butter and a snail into each shell. Bake at 200°C for 10–12 minutes. Serve hot with bread.
