The story

Sambusa is a Ethiopian starter with a clear sense of place. Sambusa belongs to the wider family of filled pastries found around the Horn of Africa, Red Sea and Indian Ocean trade routes. Ethiopian versions commonly use lentils or minced meat with onion and spice. The recipe below keeps the defining ingredients and technique intact while giving practical metric quantities and enough detail for a home cook to judge texture, seasoning and doneness rather than simply follow a timer.

Ingredients

6servings
  • 220 g brown or green lentils
  • 180 g onionfinely diced
  • 10 g Garlicminced
  • 2 piece green chilliesfinely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.25 tsp ground cardamom
  • 260 g plain flour
  • 140 ml waterfor dough
  • 20 ml neutral oilfor dough and filling
  • 900 ml neutral frying oil
  • 1.5 tsp fine salt

Method

  1. Rinse the lentils and simmer in unsalted

Rinse the lentils and simmer in unsalted water until just tender, about 18–22 minutes. Drain very thoroughly; wet filling softens the pastry and causes splitting during frying.

Look for: just tender, about 18–22 minutes Tip: Cool the filling completely and keep it fairly dry; crisp sambusa depends more on moisture control than on extra frying time. Avoid: Wet lentils steam the wrapper, thick dough turns heavy and poorly sealed corners leak into the oil.
  2. Cook onion in 10 ml oil over

Cook onion in 10 ml oil over medium heat until soft and lightly golden. Add garlic, chilli, cumin, coriander and cardamom and stir for 30 seconds, then fold in lentils and season. Cook another 2 minutes until dry and fragrant, then cool completely.

Look for: soft and lightly golden
  3. Mix flour, salt, 10 ml oil and

Mix flour, salt, 10 ml oil and enough water to make a firm smooth dough. Knead 5 minutes, cover and rest 20 minutes.

  4. Divide the dough, roll very thin and

Divide the dough, roll very thin and cut into strips or circles. Form cones or triangles, add about 1 tablespoon filling and seal the edges with a flour-water paste, pressing out excess air.

  5. Heat frying oil to 175°C

Heat frying oil to 175°C. Fry sambusas in small batches for 3–4 minutes, turning, until crisp and evenly golden.

Look for: crisp and evenly golden
  6. Drain on a rack and serve hot

Drain on a rack and serve hot with a fresh chilli or tomato sauce, allowing the pastry to stay crisp rather than covering it.

Look for: Pastry is blistered and rigid, filling is hot and the seams remain closed without greasy patches.
