The story

The modern Black Forest gateau emerged in Germany in the early twentieth century, combining ingredients associated with the Black Forest region, especially Kirsch made from local cherries. Its exact inventor is disputed, but it quickly became a national showpiece. It is famous for visual contrast and balanced richness: dark sponge, white cream and red cherries, with Kirsch providing an aromatic edge that prevents the cake tasting merely sweet. The cake is a bakery classic for birthdays, Kaffee und Kuchen and celebrations and has become one of Germany's most internationally recognised desserts.
