The story
Catfish frying is rooted in the river and pond communities of the American South. Indigenous peoples ate native catfish long before European settlement, and African American cooks shaped the region’s enduring traditions of seasoning and frying fish. Commercial aquaculture in states such as Mississippi later made farmed catfish widely available. Catfish has a mild, slightly sweet flavour and firm flakes that stand up well to frying. A cornmeal coating creates a dry, crisp crust distinct from a flour-heavy batter. The fish should emerge moist inside, with enough cayenne, black pepper and salt to season both crust and flesh. A catfish fry is often a social gathering rather than only a recipe, held at churches, community events, fish camps and family reunions. Platters are served with hush puppies, coleslaw, pickles and sauce. In the Mississippi Delta and across the South, catfish also supports an important farming industry.

Method
Soak the fish
Cut catfish into even portions and soak in buttermilk for 20 minutes.

Mix cornmeal, flour, paprika, cayenne, salt and pepper. Let excess buttermilk drip off, then press fish into the coating.

Fry at 175 C / 350 F for 3-4 minutes per side until crisp and cooked through.

Serve with lemon wedges, hot sauce or tartare sauce.
