The story

Pot roast reflects European braising traditions adapted to American cuts of beef and household ovens. The term “Yankee pot roast” became associated with New England versions cooked with root vegetables, although similar dishes are found across the country. It made economical, muscular cuts tender and could feed a family from one pot. Long, moist cooking transforms chuck beef into fork-tender slices while flavouring the surrounding vegetables and gravy. The dish is valued less for refinement than for dependable comfort: browned meat, sweet roots, savoury broth and a kitchen filled with the smell of a slow Sunday dinner. Yankee pot roast is linked to New England home cooking, cold weather and family meals. Leftovers can be reheated, turned into sandwiches or chopped into hash, making it practical as well as comforting. Method

  1. Brown the beef

    Pat beef dry, season well and brown in a heavy pot over medium-high heat for 4-5 minutes per side.

    Look for: The beef should have a deep brown crust. Tip: Dry meat browns far better than damp meat. Avoid: Do not rush browning; pale meat gives a flat gravy.
  2. Build the braise

    Add onion wedges, tomato paste, stock, bay and thyme. Scrape the base of the pot to dissolve browned bits.

    Look for: The liquid should come halfway up the beef. Tip: The browned bits are the flavour of the gravy. Avoid: Do not completely submerge the roast or it tastes boiled.
  3. Cook low and slow

    Cover and braise at 160 C / 320 F for 2.5-3 hours until nearly tender.

    Look for: A fork should twist into the beef with little resistance. Tip: Low oven heat gives steady tenderising. Avoid: Do not cook at a hard boil.
  4. Add vegetables

    Add carrots and potatoes for the final 45-60 minutes until tender.

    Look for: Vegetables should hold shape but be soft inside. Tip: Cut vegetables large for a traditional pot roast plate. Avoid: Do not add them at the start or they turn mushy.
  5. Rest and slice

    Rest beef for 15 minutes, then slice across the grain and serve with vegetables and gravy.

    Look for: Slices should be moist and pull apart easily. Tip: Skim excess fat from the gravy before serving. Avoid: Do not slice with the grain.
