The story

Pecan pie is a comparatively modern American dessert. Pecans are native to North America and were long used by Indigenous peoples, but recipes recognisable as pecan pie became widespread in the late nineteenth and early twentieth centuries. Corn-syrup manufacturers later promoted a standardised version that helped establish it as a Southern holiday classic. The pie combines crisp, aromatic pecans with a soft filling that sets somewhere between custard and caramel. The challenge is to cook the centre fully without burning the nuts or toughening the crust. A little salt and vanilla prevent the sweetness from becoming flat. Pecan pie is strongly associated with Thanksgiving, Christmas and Southern hospitality. Texas, Georgia and other pecan-growing states claim particular affection for it. Variations add bourbon, chocolate or maple, but the classic version keeps pecans prominent across the surface.

Method

  1. Prepare the shell

    Fit pastry into a 23 cm tin, crimp and chill for 20 minutes.

    Look for: The pastry should feel firm before filling. Tip: A chilled shell holds its shape better. Avoid: Do not stretch pastry into the tin or it shrinks.
  2. Mix the filling

    Whisk eggs, sugar, syrup, melted butter, vanilla and salt until smooth, then fold in pecans.

    Look for: The filling should be glossy and fluid. Tip: Roughly chopped pecans make slicing easier than all whole halves. Avoid: Do not whip in lots of air.
  3. Bake gently

    Bake at 175 C / 350 F for 45-55 minutes until the edge is set and centre has a slight wobble.

    Look for: The centre should jiggle gently, not slosh. Tip: Shield the crust if it browns too quickly. Avoid: Do not overbake until fully firm; it sets as it cools.
  4. Cool before slicing

    Cool completely for at least 3 hours before cutting.

    Look for: Slices should hold with a glossy filling. Tip: Serve small slices because it is rich. Avoid: Cutting warm pie makes the filling run.
