The story
Trout were introduced to Patagonian rivers and lakes in the early twentieth century and became closely associated with the region’s sport fishing and mountain tourism. Local restaurants adopted simple preparations that keep the clean freshwater flavour at the centre. The dish is famous for delicacy rather than heavy seasoning: crisp skin, moist pink flesh, browned butter and lemon. Overcooking is the main danger because the fillets are lean and tender. Trout appears on menus throughout the Andean lake districts around Bariloche, San Martín de los Andes and further south. It connects Patagonia’s food story to its cold waters as well as its ranches.
