The story

Gumbo developed in Louisiana through the interaction of West and Central African, Indigenous, French, Spanish and later immigrant food traditions. Its name is often linked to a West African word for okra, while filé powder comes from sassafras used by Choctaw people. Dark roux and the local aromatic trinity became defining elements of many Cajun versions. Chicken-and-sausage gumbo is known for its almost mahogany roux, smoky meat and layered broth. The roux must be cooked far enough to gain roasted complexity without burning. Unlike a simple stew, gumbo depends on the combined character of roux, stock, aromatics, seasoning and a restrained final thickness. Gumbo is a communal Louisiana dish served at family tables, celebrations, restaurants and large gatherings. Recipes communicate place and family history: seafood gumbos, Creole tomato versions and Cajun poultry-and-sausage versions all have devoted followings. It is generally spooned over rice and often finished with filé at the table.

Method

  1. Brown the meat

    Brown chicken thighs and sliced sausage in a heavy pot over medium-high heat, then remove.

    Look for: The meat should have browned edges and fond on the pot. Tip: Brown in batches if needed. Avoid: Do not burn the sausage fat; gumbo flavour starts here.
  2. Cook the roux

    Whisk oil and flour over medium heat for 20-30 minutes until dark peanut-butter to chocolate brown.

    Look for: The roux should be glossy and deep brown. Tip: Use a flat-edged spoon to scrape the corners. Avoid: Do not walk away; a burnt roux cannot be saved.
  3. Add the trinity

    Add diced onion, green pepper and celery. Stir for 5 minutes to stop the roux cooking and soften the vegetables.

    Look for: The vegetables should sizzle and the roux should coat them. Tip: This step gives gumbo its rounded Louisiana base. Avoid: Do not add cold stock before the vegetables soften.
  4. Simmer the gumbo

    Add stock, chicken and sausage. Simmer gently for 45-60 minutes, then season and serve over rice.

    Look for: The broth should be dark, savoury and slightly thickened. Tip: File powder or hot sauce can be offered at the table. Avoid: Do not boil hard or the chicken can toughen.
