The story

Oysters Rockefeller was created at Antoine’s restaurant in New Orleans in 1889 by Jules Alciatore. It was devised as a replacement for escargots when French snails were difficult to obtain. The dish was named for John D. Rockefeller because the sauce was considered exceptionally rich, and Antoine’s original formula remains closely guarded. The dish combines briny oysters with a deeply flavoured green topping, traditionally built from herbs and vegetables rather than simply spinach. Baking or grilling cooks the oysters gently while browning the surface. Its richness, theatrical shell presentation and New Orleans pedigree made it a restaurant classic. Oysters Rockefeller represents the French-Creole fine-dining tradition of New Orleans. It remains prominent in historic restaurants, holiday menus and celebratory seafood meals. Serving the oysters on rock salt helps stabilise the shells and creates the formal presentation associated with the dish.

Method

  1. Prepare the oyster bed

    Heat the oven to 230 C / 450 F. Spread rock salt on a tray and nestle the shucked oysters level in the salt.

    Look for: The oysters should sit flat so the liquor stays in the shell. Tip: Rock salt steadies the shells and helps presentation. Avoid: Do not tilt the shells or the juices spill out.
  2. Make the green butter

    Finely mince shallot and chop spinach, parsley and herbs. Cook in butter over medium heat until softened, then season.

    Look for: The mixture should be deep green and buttery, not watery. Tip: A little aniseed note from herbs is traditional. Avoid: Do not leave large spinach pieces; the topping should spoon neatly.
  3. Top and bake

    Spoon the green butter over each oyster, sprinkle breadcrumbs and bake for 6-8 minutes.

    Look for: The topping should bubble and the crumbs should turn golden. Tip: Serve as soon as the butter is sizzling. Avoid: Do not overbake or the oysters shrink.
